Lubella's Patisserie, a bakery located in East Dallas, is preparing to open its second location in Arlington this fall. The expansion marks a significant milestone for the business, which has been operating for four years and has grown from a home-based operation into a full-service establishment.
The bakery was founded by Ismael Trejo and his wife, Maria Becerra, in 2020. Both had worked in the restaurant industry for decades before losing their jobs during the pandemic. Becerra, a professionally trained pastry chef, began creating baked goods such as cheesecakes, muffins, and banana bread, while Trejo handled sales and logistics.
The couple noted that they did not spend money on advertising, relying instead on word of mouth and social media to build their customer base.
In September 2022, the couple moved their operation into a shopping plaza in East Dallas. Despite skepticism from others about using the term "patisserie" in that neighborhood, the business thrived. Trejo recalled that they sold out their inventory on the first day of operations, serving more than 350 customers.
Today, the menu has expanded beyond pastries to include brunch and lunch items with Latin influences, such as chilaquiles, quiche, and salmon tacos. Becerra describes the creative process of developing new items, like a monkey bread variation with chocolate chips, as a form of therapy. The bakery attracts customers from across North Texas, including individuals traveling from Allen and Fort Worth.
